Probiotics and milk products
The positive relationship between probiotics and milk products has been known
for a long time. Milk products are in fact good vehicles for the following
reasons
(5):
- Dairy products protect the bacteria from the "hostile" environment of the
intestinal tract (e.g., low pH in the stomach, the concentration of bile in the
small intestine). The protective action of dairy products allows the bacteria
to survive more easily in these conditions.
- Dairy products must be refrigerated, which facilitates storage and favours the
stability of probiotic bacteria.
