What are antioxidants?
Antioxidants are molecules that prevent or reduce damage to cells of the human
body caused by free radicals.
Free radicals are unstable molecules naturally produced by the body. They are
the result of chemical reactions generated during normal cellular processes and
can also be created by exposure to high pollution levels, UV rays, cigarette
smoke, or from intense physical activity. In fact, because of their high
chemical reactivity, free radicals damage the integrity of cells and as a
result disrupt normal cell functioning

21).
Antioxidants ensure balance by neutralizing excess free radicals. This protects
the body's cells from premature aging and ensures adequate functioning.
Among the most well-known antioxidants are polyphenols. Polyphenols are families
of chemicals that are present in various fruits and vegetables. They are
responsible for the intense colour of certain plants and for the astringency
and bitterness of other foods. These molecules are found in large quantities in
red wine and green tea, as well as foods such as field berries (blueberries,
strawberries, etc.)
